Here’s a little secret for you… keep it simple!
This is a salad that you can throw together in a couple of minutes, and only need 2 main ingredients plus the usual condiments – tomatoes, basil, olive oil, balsamic vinegar, and salt.
Chop, add, pour, mix, and eat. Yummy for a panda’s tummy!
AND! If you have green tomatoes from the garden kicking around, this is a fantastic way of putting them to good use. Just add a few more minutes after stirring to let the salt do it’s magic.
1 Large tomato (ripe or green)
1 Bunch of basil leaves
1/2 tablespoon Balsamic vinegar
1 tablespoon Extra Virgin Olive Oil
Pinch of kosher salt
Don’t blink, you might miss something.
- Cut tomatoe into small bite size chunks and throw in the bowl;
- Chop up the basil into nice slivers of love and throw into the bowl;
- Sprinkle on the salt;
- Pour in vinegar;
- Pour in olive oil;
- Gently stir it up;
- Enjoy right away or, if you’re using green tomatoes, let it stand a few minutes. Ripe tomatoes will break down super quick so you want to eat them as soon as possible.
